Happy Monday! I hope you all had a great weekend, and for my Canadians I hope you are enjoying the long weekend! I am on my last day in LA and loving the warm sunshine. I don’t think I am ready to come home tomorrow 🙁 But I am really excited about today’s post! I never considered myself a foodie, I love food but I used to be super picky and I really preferred to make my own food at home. But one the past few years I have become more open to trying things. I started cooking and baking very young, so I thought I would start sharing some of my favourite recipes with you. My Mom and I always look for quick and easy recipes so I hope these might be helpful in your life! First up, egg muffin cups!
This is an amazing breakfast for people who don’t have much time in the morning. I have always been a very scheduled person in the morning. But breakfast doesn’t get a lot of time so I need fast and easy ideas. I really love trying to have eggs in the morning, they keep me feeling full and feeling energized. This recipe has been great, I can pop them in the oven and then go finish getting ready and come back to a great breakfast!
- Cooked Bacon
- Cheese of choice
- Cooking Spray
- Any other toppings (ex mushrooms, peppers, ham)
- Preheat oven to 350 degrees
- Spray muffin pan with cooking spray
- In a bowl whisk together eggs and milk
- Add grated cheese and cooked chopped bacon (or other toppings)
- Pour egg mixture into muffin pan
- Cook in oven for 20-25 minutes
- Take out and let sit for 5 min before serving
